Hi guys! I’m Kim from My Life According to Pinterest and I’m so excited to be guest posting here at Going Green with the Grizls! I decided to try out this little brownie recipe because I crave chocolate- a lot. Probably too much really. Since I have this problem I had to find a way to get the chocolate, but not feel so guilty about indulging. I saw this recipe on Spark and was skeptical. I mean a brownie that has more fruits and veggies then chocolate- how could it be any good? But, they are. Now, do they taste exactly like a gooey chocolate triple chunk Duncan Hines brownie? No, they don’t. But, we all know the “healthy” stuff never does. What these are though are really good for a healthier brownie option. Personally, I thought they tasted kinda of like super chocolate chip banana bread. I don’t know about you, but that’s sound pretty good to me! I couldn’t taste the zucchini at all, so these would be a great way to sneak in some veggies for your littles. Plus, the zucchini, banana, and applesauce really make these super moist.
Ingredients:
1 large banana mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded or grated zucchini
2 cups all purpose flour
Directions:
In a large bowl, mix together the applesauce, mashed bananas and sugar.

Ii grew up eating zucchini bread! I’m sad that this recipe has banana in it as I’m allergic and these sound scrumptious!!!

I started making up a batch before realizing my banana was beyond saving for use. I subbed an egg and they turned out really good. 😉

I would never have thought to use zucchini in brownies! I will have to try this some time. One of the people I used to work with a million years ago used to make fudge with Velveeta! I would love to find that recipe. I guess in order to find it, I should look for it!
